- Once the yeast mixture is fluffy add the flour, brown sugar/coconut sugar, and salt to the bowl
- Start mixing on low in your stand mixer
- Mix until it comes into a bowl and pulls away from the bowl. This is the point you may need to add more flour. Add up to a cup 1/4 cup at a time
- Once it comes to a ball and pulls away from the sides allow it to mix on medium for 10-15 minutes
- Once down separate the dough into 8 dough balls and cover with a clean damp towel for 15 minutes
- After they rise for 15 minutes shape the dough balls into bagels by using your index finger to make a whole in the center
- Once the 8 bagels are shaped put them on 8 individual squares of parchment paper (this makes the boiling process so much easier without loosing the rise)
- Once all the bagels are shaped cover with a damp towel and let them rise for 30 minutes
- Preheat oven to 350 degrees F
- Boil your water and the brown sugar and stir to dissolve
- Boil each bagel for 30 seconds to 1 minute on each side. Boil 1-2 bagels at a time. The longer they boil the chewier they will be.
- Once bagels are boiled place on a parchment lined baking sheet
- Immediately top with desired toppings
- Bake for 25-40 minutes, bake to your desired browness.
- Allow to cool completely before cutting (cooling them on a wire rack is best)
