You know the famous phrase “Taco Tuesday” right? Well sometimes those tacos nights can get a bit boring. Therefore these easy steak fajitas are a fantastic recipe to throw into your rotation of easy fast meals!
Not only are these easy steak fajitas packed with veggies and protein therefore they are a meal you can feel really good about serving to your family!
Ways to make Steak Fajitas
Since this is such an easy meal to make it also has variety in how it can be made. Cooking it on the stovetop is my preferred method but they can also be made on a grill or in the oven. Cooking them in the oven thus can be called a sheet pan meal.
Stovetop
In particular if you are making them on the stovetop you can cook the meat two ways. First you can pre-slice the meat prior to cooking it. I recommend putting the meat in the freezer for 20-30 minutes thus making the meat more firm and easier to cut.
The next way is to cook the steaks whole in a cast iron skillet and cut the meat into slices after its cooked. Cooking the steaks whole can make the meat dry therefore you want to be sure you are cutting the meat against the grain so that it is more tender.
Slicing the meat before cooking is also the preferred method if you like your steak well done.
Cooking then slicing the meat is the preferred method if you like your steak more on the rare-medium side.
Grill
Furthermore to cook these easy steak fajitas on the grill you will want to use a flat top grill pan. You can cook the steak over an open grill but for the peppers you will want to use either or flat top grill pan or a cast iron skillet to ensure the peppers and onions do not fall into the grill.
As a result of cooking on a grill the best way to cook the steaks is to leave them whole to ensure an even doneness throughout. As a result of the specifics of cooking on a grill, which depends on the thickness and desired end result of what you want for your steak I can’t give exact time perimeters on cook time.
For the peppers and onions, you will want to cut those first and place them on your grill pan or cast iron once your steaks are about half way done. You will need to move the peppers and onions around more when using the grill to ensure they do not burn.
Oven/Sheet Pan
In comparison to cooking these easy steak fajitas on the stove you will likewise want to slice the meat, peppers, and onions to an even thickness and toss them in the seasoning with your oil of choice. Moreover you will lay everything out into an even layer on a sheet pan and bake in a 400 degree F oven for 20-25 minutes. The cooking time will depend on how well done you like your steak, thus it is up to your discretion.
Ingredients for Steak Fajitas
1 teaspoon paprika
1 t salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
2 teaspoons chili powder
1/2 teaspoon cumin
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
2 T avocado oil (3 if marinating the meat)
1.5 lbs steak
3 bell peppers of various color (I like to use orange, red, and yellow)
1 large onion (I like yellow the best but red is also good)
3 cloves minced garlic
6-8 flour tortillas
Optional toppings:
Sour cream
Shredder cheese
Cilantro
Lime juice

Can I cook this in my instant pot?
Yes of course! Similarly I would follow the same directions as if you were going to cook the fajitas on the stovetop.
Should I marinate the steak?
Due to time, if you have it, absolutely. It is not a necessary step though. Furthermore if you do you will want to mix the oil and seasonings together and marinate the steak in that for 2 hours up to a whole day in advance. Thus be sure the meat is stored in the fridge.
What are the best cuts of steak?
Flank steak or skirt steak cut against the grain are specifically the best options.
Best way to store leftovers
The best way to store the leftover steak fajitas is in a glass container in the fridge. Thus it will stay good for up to 5 days.

Yes you can, but know that the peppers might be a bit more soggy once thawed and reheated again

Cooking the leftovers on a cast iron pan is therefore the best way to reheat these leftovers. You can also put them into a 400 degree F oven until heated through, which is about 15 minutes.

Easy Steak Fajitas
These easy steak fajitas are something you will want to add to your families rotation of mexican dishes! They are fast to make and are packed full of veggies and protein!
Ingredients
- 1 t paprika
- 2 t chili powder
- 1 t salt
- 1/2 t onion powder
- 1/2 t garlic powder
- 1/2 t cumin
- 1/4 t black pepper
- 1/4 t cayenne pepper
- 2 T avocado oil (more if marinating meat)
- 1 1/2 lbs steak
- 3 bell peppers (red, yellow, orange, or green)
- 1 large onion (yellow or red)
- 3 cloves garlic, minced
- 6-8 flour tortillas
- Shredded cheese
- Sour cream
- Cilantro
Instructions
- Preheat cast iron pan on medium heat
- Mix paprika, chili powder, salt, onion powder, garlic powder, cumin, black pepper, cayenne pepper, and 1 T avocado oil together in a large bowl
- Slice the peppers and onions 1/4 inch thick
- Slice steak 1/4 inch thick
- Mince the garlic
- Add the steak, peppers, onions, and garlic to the bowl of seasonings and oil
- Let sit for 5 minutes
- While it sits add 1 T avocado oil to your preheating cast iron
- Add everything to your hot cast iron pan
- Cook stirring occasionally for 10-15 minutes until the steak is done to your likeness
- Optional: Warm tortillas in the oven wrapped in tin foil for 5 minutes at 350 degree F
- Serve meat and peppers on flour tortillas with sour cream and shredded cheese
- Optional toppings: Cilantro, lime juice, salsa, avocado, guacamole
